滚开的水不烫手
按下按钮,抽出玻璃罩内的空气,当抽到一定的真空度时,水开始沸腾。但你小心翼翼地用手触摸水杯的外壁时,一点也不烫手。
为什么从杯子外面摸不烫手?
基本原理:
物质的三态变化不仅与温度有关,还与压力有关。 通常说水的沸点是100℃,是指在一个大气压条件下,压力愈大,沸点也愈高,反之压力小,沸点也低。在真空下,水大约在30℃左右即可沸腾。
这就是为什么在高原地区,必需用高压锅煮饭才行的道理。

Why the beaker is not hot?
Why: Under the normal pressure water boils at 1000C, but the lower is the pressure, the lower is the boiling point and vice versa. When the beaker inside the glass jar is in the vacuum condition, the boiling point of the water in the beaker is about 300C, so the water is boiling, but not hot.
